Thank you so much for sharing a part of your life's journey with me! I´ve personally been on a low carb diet since June 2003. I have enjoyed every day of it. Low carb is not a diet of "sacrifice". I am always full when I finish eating, always enjoying delicious flavors, and enjoy my health and energy levels. I can relish my meals of filet mignon with asparagus and have some homemade ice cream with ripe raspberries for dessert.

Once I cut excess sugars and starches out of my diet, I found I had far more energy to enjoy life with. The rich fiber foods have helped me sleep more soundly, and the omega-3 oils keep my brain's creativity and efficiency at an all time high.

What I liked from the read.... I found this was a good read for helping with tracking your low carbs. I liked the presentation...of what you can do with an egg, tuna, and many other items such as cheese. From simply ingredients and lots of information on ...what, how to do with celery, olives, low cal. mayonnaise, low carb tortilla, lettuce, cottage cheese, mozzarella balls in oil, nuts in the correct portions, salads, Cole slaw, Ginger Salad Dressing, Spinach, humus and all the way to good salads as well. Then there are vegetables, bean sprouts to even pickles were added. I did like the list of carb counts for a lots of vegetable that I use some even daily. Juicing was interesting for me because I do have one but haven't use it lately. Smoothies that provide great fiber, protein and Vitamin C are so easily made. Then I like the introduction of dips and sauces that are so easy to make and even learned about making guacamole dip using 'Edamame.' I enjoyed the salsa recipe...that was so easy to make. Being told to eat nitrate free turkey, ham and roast beef are good for you along with tuna fish and shrimp and cocktail sauce was also discussed. For deserts the Berry Plate were really quite interesting to make along with Cheese Plates. I loved this quote "It's time for us to regain control over our time by connecting with fresh, healthy eating styles" and this can only be done by each one of us watching what we eat. The last portion of this book talked about 'carbohydrates' being one of the four main types of energy that our body needs in order to physically burn for fuel also explaining fats, proteins and alcohols. The summary toward the end dealt with low carb food list, meat/fish, vegetables, fruits, milk, dairy and eggs, nuts and seeds. When stocking in your low carb pantry you need to clean out the junk food! OK, my ice cream has to go! So, to sum it up...things to have in the house is water, lots of cheese, greens and broccoli, (snacking veggies), fresh meat...with nitrates. Also Vitamins are needed in your daily diet. This author even went on to explain about low carb spices...I was happy to see I had quite a few of those already in my cabinet. This was interesting...having slow music can even reduce your appetite...wow! I will try that! And then the last point given by this author: Reduce Stress to Reduce Carb Cravings... I found was a interesting read because I really need to reduce stress as well as my carbs. When I first started reading "Quick No-Cook Low Carb Recipes (Low Carb Reference)" I wasn't sure just what I would be getting from the low carb recipes and all but I will truly say after reading and thinking about it, I thought this read was well written by this author. This author goes into a lot of helpful details and I was made to feel that by reading this book it will help me and maybe even you if you are in need to lower your low carbs intake. Thank you to the author for an inspiring read!

The recipes is this book are easy and delicious. I enjoy preparing food when I don't spend hours in the kitchen. These are also recipes I can take for pot luck, and I don't worry about cooling.
