Fantastic recipes. They are healthy, mostly vegan (recipes that are not vegan include vegan substitutes), and they taste good. The author also includes recommended supplements which is very useful. I even learned the difference between different types of vegetarians. I am really glad I found this book.
Easy Vegetarian Recipes: A Vegetarian Cookbook with Healthy Recipes for Vegans by Jessica Mills is a very unique and wonderful collection of vegetarian dishes for every meal and just about any occasion. You definitely do not need to be a vegetarian to enjoy these dishes, I know because I am not one. I have a daughter that has decided she does not want to eat cute animals anymore, so I have given in and started eating less meat myself. As far as vegetarian books go, this is one of the better ones I have found. This book includes 10 recipes for every meal, including: breakfast, lunch, dinner, snacks and appetizers, and desserts. For the dishes that are not strictly Vegan, the author includes great Vegan substitutes (such as Silken Tofu for eggs) that I have used in other recipes. This is great, but it is not why I like this cookbook so much. The book starts out with definitions of all the different types of vegetarians, then it goes on to explain the need for special vegetarian nutrition and why, and then it gives recommended supplements for Vegans and vegetarians in order to stay healthy. As far as the dishes go, the ones I have tried are fairly easy to make and taste great. Even though the ingredients are fairly common, they are not something that is found in most kitchens, so you may need to go grocery shopping first. I found all the ingredients at my local grocery store, so I do not think you will have a problem. I do wish that there were more recipes, but the abundance of extra valuable content makes this one of my favorites. I now know that my daughter is very healthy and getting all the nutrients that she needs, which is worth the world to me. This is a great addition to my cookbook library, and one that I will use often.
This book is a diamond in the ruff. It includes many recipes for every meal, including dessert. All of the recipes include Vegan only options if they are not already Vegan. I really hope that this author puts out more cookbooks.
