James Shipley is a Chef, Chocolatier, and Wilton Instructor with a passion for international cuisine and for his Native American roots. Chef James is influenced by his grandmother Genevieve, a lifelong chef in the logging heydays of the Minnesota Northwoods. Chef James studied with his grandmother, at Le Cordon Bleu, and at Ecole Chocolat. Chef James has worked at restaurants such as 20/21 and The Good Earth, and he has owned several restaurants in the Miami Valley, Ohio area. Chef James' personal philosophy of food is to let the ingredients speak, so he designs recipes which highlight the natural greatness in each item.
